The omitted letters spell out A WAITRESS, ESPECIALLY ONE IN A LYONS TEA SHOP. That is the definition of a NIPPIE (although the Wikipedia page uses the original – and, in context, perhaps more appropriate – spelling).

The three unclued entries are BUSGIRL, CARHOP, and MOUSMEE.

This was quite gentle, with a fairly fluid grill fill. 28ac would have been trickier if I hadn’t seen it (and ST for “quiet”) in crosswords before. 1dn raised a smile for this displaced Scot, and I shall have to add 12dn to my vocabulary. SUN as an archaic term for “year” was a new one for me.

    INAPPETENT (17d) seems to have been inadvertently left unexplained in the blog.
    I read it as I (current), TETE reversed (head of France turned up) after APP (apparently)
    Similarly the wordplay for NAUSEANT (23d)
    NU (Extremely non-U)+SENT (sniff out-of-date; an obsolete spelling of scent).
