Answer: Not sure I can explain this, even after an online search. An escalop is the shellfish also known as a scallop, and “scallop” (but not “escalop”) also stands for its shell or a shell shaped dish used for cooking and serving seafood. Thus “escalop” = “dish” only indirectly. On the other hand, if dish is mean to be course in a meal, it would have to be “escalope/scallop/a thin piece of meat fried with egg and breadcrumbs”, or “escalop/scallop/a shellfish”. But can the latter be considered a dish without an accompanying description of how it’s cooked?

I wondered about ESCALOP too.
‘Escalope’ is a slice of meat – ok to define ‘dish’, I think.
It may also be called ‘scallop’ or ‘escallop’.
According to WordWeb, the latter is sometimes confused with ‘escalop’.
However, it doesn’t give a meaning of ‘escalop’.
Chambers does give ‘escalop’ as an alternative for ‘scallop’ (in heraldry, whatever that means).
Not sure whether that refers back to ‘escalope’ or to the shell-fish.
(‘Scallop’ can mean either)
The OED gives ESCALOP as a variant of escal[l]ope, not that you should need access to that for a Sunday puzzle.

23a had me puzzled, as I had one letter too many – for “teaching graduate” I was using the more common “BEd”.
